I give you Southern Comfort Cake with a booze glaze.

I didn't get mocked for the photo. Instead some eye rolling and a resigned sigh. Maybe more than one sigh? Seems my freinds and family are getting used to this blogging thing, an inexplicable hobby of mine they may not understand, but none the less, they put up with.

The cake was everything it could be and more. Way easy, way tasty.

one pack of yellow cake mix
one pack of vanilla pudding mix
4 eggs
1/2 cup of So Co
1/2 cup milk
1/2 cup canola or veggie oil
mix it all together

pop it on the preheated 350 oven till a toothpick comes out clean - 1hr +
I did a little glaze too. Wait till the cake is a little cool, plate it, and pour it on.

1/2 cup sugar
1/2 cup butter
1/4 cup southern comfort
1/8 cup water

Melt butter in sm pot, stir in water and sugar. Boil and stir continuously for 3 mins.
Remove from heat, add the booze. then stir for a few more mins.

The 70s was a wonderful time, when no one even expected you to whip something up from scratch! How liberating.

It leaves so much more time for the knitting.

Next time I have company, maybe I'll try the little no bake cheesecake tarts my Mom used to whip up. And celery sticks with cream cheese. Or fondue. ...

If only I could borrow Sarah's terrycloth outfit.

I had one of those terry cloth outfits in a teal blue. It was my FAVORITE.
Tip for the cake - poke holes in the top with a skewer before pouring glaze on so it soaks in more. Thanks for the recipe! I may be doing more cooking and less knitting for awhile..

This cake is getting made this very weekend. Forget about any weight loss resolutions... Southern Comfort cake, here I come!

Back in the '80s (the early '80s, so almost the '70s), I used to make that same cake, in a bundt pan, with rum. But Southern Comfort would be so much better!
